Nobody eats dessert for the protein. But protein content is one of the quieter reasons frozen yogurt sits differently from other sweet things.
Milk carries two protein families: casein and whey. Both survive into frozen yogurt, and fermentation partially breaks down casein into shorter peptides, which can make it slightly easier to digest.
Dairy protein is complete — it contains all nine essential amino acids — and it is particularly rich in leucine, the amino acid most involved in signalling muscle repair.
